FabCafe and Loftwork have launched the "NOTONO" project as a support activity for the damage caused by the Noto Peninsula earthquake in 2024. We aim to help in some small way in the revitalization of the damaged Noto region and the preservation of traditional industries.

The first event is a collaboration with camo Co., Ltd., which has a network with over 150 sake breweries nationwide and promotes delicious Japanese sake and culture to the world. Camo Co., Ltd., together with Yoshida Shuzoten, a sake brewery in Hakusan City, Ishikawa Prefecture, which brews "Tedorigawa" and "Yoshidakura U," is running a project called "Don't Stop Noto's Sake!" to support the recovery of sake breweries that were affected by the Noto Peninsula earthquake and found it difficult to continue brewing.

At the event, together with Noto's sake brewers, we will discuss the current situation in Noto, collaborative brewing efforts, and what people living in urban areas such as Tokyo can do, all while enjoying Noto's sake and food.

About the "Don't Stop Drinking Noto!" Project

This is a joint brewing project in which sake breweries from all over Japan cooperate to support sake breweries in Ishikawa Prefecture that were damaged by the Noto Peninsula earthquake. It was launched by Yoshida Shuzoten, a sake brewery in Hakusan City, Ishikawa Prefecture, and is being carried out together with camo Co., Ltd.

The Noto Peninsula Earthquake of 2024 occurred on January 1, 2024, causing severe damage to sake breweries in Noto, making it difficult to continue brewing sake for the next few years. In order to combat the issues of "not forgetting the memories of the taste of our brands," "stopping the distribution of our brands," and "loss of sales," we will ask sake breweries across the country to cooperate and jointly make sake, creating a system to ensure that the distribution of the brands of the affected breweries is not halted. In the first project, we received more than 40 million yen in support purchases, and realized joint brewing between the affected breweries and sake breweries across the country. We unveiled the jointly brewed sake on June 7, and are currently accepting support purchases for the second round.

Tsuruno Sake Brewery and Matsunami Sake Brewery from Noto Town will be participating as guests!

Shintaro Tsuruno, the head brewer of Tsuruno Sake Brewery, and Seiko Kaneshi, the young female proprietress of Matsunami Sake Brewery, will participate in this event, which is aimed at the recovery of the Noto Peninsula. Oku-Noto is the birthplace of the Noto Toji, one of the four major brewers in Japan, and is home to approximately one-third of the sake breweries in Ishikawa Prefecture, but most of them were devastated by the recent earthquake. The breweries of Tsuruno Sake Brewery and Matsunami Sake Brewery were also completely destroyed, and sake brewing functions have completely stopped. The two breweries in Noto Town that suffered such devastating damage are expected to take more than five to eight years to rebuild, but their desire to make sake and deliver it to the public is only getting stronger every day. We look forward to your support at this event, which resonates with their passion and aims to restore Noto Town and the entire Oku-Noto region. Tsuruno Sake Brewery (Noto Town) # Fukuda Sake Brewery (Hirado City, Nagasaki Prefecture) Tani Izumi (Original)

This sake is made based on the original recipe of "Taniizumi Tokubetsu Junmai". The sake rice was brewed using surviving rice rescued from a completely destroyed storehouse. It has a refreshing and sweet banana-like aroma, and a gentle, soft sweetness and umami taste. It is a fresh and clear sake. You can also enjoy the refreshing gassy feeling. Please enjoy the chemical reaction between Fukuda Shuzo and Tsuruno Shuzoten.

Taniizumi # Fukuumi (collaboration)

This is a collaboration brewed sake with "Taniizumi # Fukukai" made with kimoto yeast. It is a fresh sake with a deep flavor and soft sweetness. It has a rich, smooth, well-balanced taste. You can also enjoy the fizz. Please enjoy the chemical reaction between Fukuda Sake Brewery and Tsuruno Sake Brewery.

Matsunami Sake Brewery (Noto Town) # Tsuchida Sake Brewery (Kawaba Village, Gunma Prefecture) Oeyama (Original)

The aim of the taste is to evoke the image of a Noto woman who is soft on the outside but strong on the inside. This sake combines a pop aroma from Kanazawa yeast with a bold flavor. The emphasis is on the local sake that Matsunami Shuzo envisions, rather than the individuality of Tsuchida Shuzo. Aroma: The first hint of sweetness is a cool Noto breeze that brings to mind the sea breeze. Taste: Rich, full-bodied, and powerfully flavored. A reproduction of the flavor beloved in fishing towns.

Oeyama # Shintsuchida (collaboration)

This sake was created with the image of a Noto woman who is soft on the outside but strong on the inside. It has a pop aroma and robust flavor derived from Kanazawa yeast. Tsuchida Sake Brewery's unique koji making is powerfully expressed using rice from Noto.

Snacks made with ingredients from the naturally rich Noto region
The diverse coastline offers a wide variety of seafood, traditional vegetables grown in the Satoyama area and the climate of Noto, and the skilled techniques of Noto artisans who have continued to preserve and refine traditional methods. The Noto Peninsula is a beautiful region located in the northern part of Ishikawa Prefecture, almost in the center of the Japanese archipelago, jutting out into the Sea of Japan. The area is rich in nature and known as "Noto's Satoyama and Satoumi," and we offer dishes from appetizers to sweets that will make you feel like you're touring this land, where diverse ingredients and ancient Japanese traditions remain strong.

While attending university, he started cooking at an Italian restaurant in Aoyama. After that, he joined a meat wholesaler and became the head of the food and beverage division, where he was responsible for store development, operation, human resource management, OEM development, etc. After launching about 20 stores, mainly in commercial facilities such as the Seibu Group, JR East, and Maru Building, he founded Seagull Co., Ltd.

Shinobu Segawa (Food coordinator, from Wajima City, Ishikawa Prefecture)

She widely disseminates the appeal of food that makes use of Noto's rich natural environment and traditional culture. While developing original products, creating recipes for local cuisine, and holding cooking classes, she also supports Satoumi education at local elementary and junior high schools from a food perspective. Recently, she has been involved in launching a food truck business for a blueberry farm in Noto Town and running a Noto fermented food event.
