Shibuya Botanical x Craft Sake Kickoff Event

Craft sake brewing will begin in 2024 using herbs, hops, and tropical fruits as ingredients.

As a "community botanical garden," the Shibuya Community Botanical Center has recruited local residents and other plant lovers to volunteer, and has taken on the challenge of tending to our herb garden and even growing hops on our rooftop. Using the herbs, hops, and tropical fruit trees we've cultivated together with our volunteers, we will begin brewing craft sake in 2024. From 2025, we will also begin brewing beer in addition to craft sake. We've teamed up with trusted brewers, and after much trial and error, we've begun selling craft sake and beer.

Now, ahead of the brewing of their third craft sake, we will be hosting a kick-off event for craft sake brewing based on the concept of "Shibuya Tropical," welcoming brewer Taisuke Sato of "haccoba -Craft Sake Brewery-." This kick-off event will feature tastings of haccoba's signature craft sake, including "Shibuya Tropical," which was brewed last year and has been well-received. We will also be discussing craft sake brewing and the botanical craft sake that will be born from Shibuya Botanical Garden in the future. We will also be exchanging ideas and opinions with participants, including fantasizing about what kind of sake we could make.

While tasting several types of craft sake (with light snacks), participants will have the opportunity to exchange ideas and opinions with brewers and botanical garden staff.

With the cooperation of haccoba, we are planning a tour of the brewery (Odaka-cho, Minamisoma City, Fukushima Prefecture) in January next year, and we will also be happy to show you around.

Guest profile: Taisuke Sato, CEO of "haccoba -Craft Sake Brewery-"

Driven by the idea of "making sake more freely," he runs "haccoba -Craft Sake Brewery-," a sake brewery in the towns of Odaka and Namie in Fukushima Prefecture, where he produces sake without genre boundaries. He offers sake that modernizes the recipe and culture of "doburoku," a home-brewed sake that was once made in Japan. He is also involved in urban development, such as collaborating with JR East to transform the nearest unmanned station into a brewery and public market. He graduated from the Faculty of Economics at Keio University. After working at Rakuten and Wantedly, he went independent and is the vice president of the Craft Sake Breweries Association. He trained in sake brewing at Abe Sake Brewery in Niigata Prefecture, a sake brewery he believes to be the world's most delicious.
